Speaking of udders, one of my greatest ulinary discoveries on the Camino has been Pincho Moruno, sow´s udder. I cannot (yet) describe in words how good they are. For starters we´re dealing with a pig :-o. Seasoning is similar to chorizo. Texture gives just the right amount of resistance and pretty homogeneous. There is no crispiness. MMMM mmm. I am in the Region Bierzo in Ponferrada. I ate this in a castle last night. Literally. Unforgettable time.
